Fall in Love with These Soft Pumpkin Chocolate Chip Cookies

Hey, girlfriend! Having lived in the South for just over six months, I’ve learned two things about the people here that will always hold true: they’re incredibly hospitable, and they love good food. So, when the holidays rolled around, I decided the best way to show my appreciation was to fill their bellies with a little fall treat.
These cookies are like your classic chocolate chip cookies, but fluffier... and a little more orangey. The pumpkin flavor is subtle, just an accent, while the nutmeg and cinnamon take them to a whole new level of sweetness. And let me tell you, they’re so soft!
Here’s the recipe I used:

Ingredients:
1 egg
1/4 tsp salt
4 tsp butter
1 1/2 cups sugar
2 1/2 cups flour
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1 tsp pumpkin spice
1 small can of pumpkin
1 cup chocolate chips
Instructions:
Preheat the oven to 375ºF.
In separate bowls, mix all dry and wet ingredients, then combine. (I used an electric mixer to make the dough extra smooth!)
Grease your baking sheet (I prefer using aluminum foil for easy cleanup).
Use a cookie scoop or an ice cream serving spoon to portion out the dough, leaving about 2 inches between each cookie.
Bake for 10 minutes. The baking time can vary depending on whether you like your cookies softer or firmer—so feel free to adjust the time to your taste.
Remove from the oven and let cool.
